Canned Potatoes: Breakfast Edition

Canned potatoes are way underutilized. They’re cheap, long shelf life, and very versatile. Dump them in a stew or a soup and you’re good to go! However, they are also perfect for breakfast!

Quick and Easy Homefries

Ingredients: 

1 can of potatoes
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ stick of butter (¼ cup)

Method: 

Drain the potatoes and cut into chunks if not already. Combine all your seasonings and toss the potatoes in it.

Heat a pan over your fire and melt the butter. Pan fry the potatoes until crispy! Enjoy with fried eggs and bacon.

Tip: Crack an egg or two on top of the potatoes after they crisp up. Turn down or remove from direct heat to prevent the potatoes from burning and cover for about 5 minutes to finish cooking the egg. Enjoy!

Cheesy Potato and Egg Casserole

Ingredients: 

1 can of potatoes
1 ½ cup shredded cheddar cheese
½ cup milk
6 large eggs
1 ½ tsp salt
1 tsp pepper
1 tsp paprika
1 tbsp minced dried onion
1 tsp garlic powder
1 tbsp parsley flake

Method: 

Heat your oven to 350F. Beat eggs in a bowl and add the milk, seasonings and 1 cup of the cheese.

Grease a baking dish and chop the potatoes up into bite sized pieces. Place in the baking dish and pour the egg mixture in. Top with the remaining ½ cup of cheese and bake until 165F in the middle! Enjoy!

Tips: you can add sausage to this too! Breakfast sausage is a clear winner, but Italian sausage would give a fantastic flavor. For some spice, try a chorizo sausage! Remember, precook the sausage before adding it to the casserole.
