Easy Meals in a Jar

Meals that you can prep ahead are one of my favorites. It’s something I’ve been doing for years just to save time. Prep ahead meals are also great for saving on storage space, especially “meals in a jar.” This is something that when it’s time to cook, you “just add water!” There are ENDLESS options for this quick and easy prep ahead; everything from soups, stews and chilis to pastas, sauces and stir-fries to desserts even! Beef and Pasta Soup with Peas and Lentils

Yield: about 8 servings


½ cup dried split peas
½ cup dried red lentils
2 tbsp chicken bouillon granules (or 4 cubes)
2 tsp Italian Season Blend
1 packet vegetable soup mix

Additional for Cooking:

10 cups water
2 cups uncooked pasta, your choice
3 cups cooked beef, shredded or cubed
1 large can diced tomatoes


1 pint sized mason jar w/ lid
2 pots (for cooking pasta and soup when ready)

In the jar, layer the peas, lentils, bouillon, season blend and soup mix. Seal with lid and close tightly. Make sure to label with name and additional ingredients.

When it’s time to cook, pour soup mix into a pot with water, beef and tomatoes. Cook until lentils and peas are soft. Cook the pasta separately and add once cooked. Enjoy!

Cajun Chicken Five Bean Soup

Yield: 9 cups


1/3 cup of each: dry kidney beans, black beans, pinto beans, navy beans and green lentils
1 tbsp Cajun Spice Blend (click here for recipe)
2 tbsp vegetable bouillon
1 bay leaf

Additional Ingredients:

10 cups water
3 cups cooked chicken, shredded or cubed
1 large can diced tomatoes


1 pint sized jar
1 pot for cooking

In the jar, layer all of the beans and then add the spice mix and bouillon. Put the lid on tightly and label with names and remaining ingredients.

When you’re ready to use, add the jar mix to a pot with water, chicken and diced tomatoes.
