Ham and Cheese Frittata

Breakfast is the most important meal of the day, and just eggs can get boring. Try this tasty ham and cheese frittata for a change! It even makes a wonderful lunch or dinner (I mean, who doesn’t love cheesy eggs for any meal??).

Cast Iron Ham and Cheese Frittata

Yield: 4-6 servings


  • 6 eggs
  • 2 c whole milk
  • 1 c shredded cheddar cheese
  • 1 c shredded swiss cheese
  • 2 c ham, cubed
  • 2 c baby spinach
  • 2 ea green onion, sliced thin
  • 2tbl butter
  • Salt and pepper to taste


  • Bowl
  • Wisk
  • Deep cast iron pan
  • Grate for fire
  • Foil

Heat the grill grate over the fire. Beat the eggs and milk together. Butter the cast iron pan. Pour the eggs and milk into the pan and sprinkle cheeses, ham, spinach and green onions and gently mix to submerge. Cover with foil.

Set pan on the grill grate and let cook for 15-20 minutes or until eggs are cooked through. Remember to always use pot holders to remove the pan from the fire.
